Receive a PDF cut sheet to fill out with your preferences. Choose how thick you want your steaks, the size of roasts, and how your ground beef is packaged.

Butcher Review

We forward your preferences to Pierce Co Meats. The butcher will call you before processing to discuss specific cuts available and make any final adjustments.

Hanging Weight vs Finished Weight

Hanging Weight

The weight of the animal after initial processing (head, hide, and organs removed). This is the weight we use for pricing.

Price: $4.25 per pound

Finished Weight

The weight of the meat you actually take home after cutting, trimming, and packaging. Usually about 70% of hanging weight.

Alternative: $8.00 per pound finished

You don't pay anything when placing your order. Payment is made when you pick up your beef. The butcher fee is paid separately to Pierce Co Meats.

No, our contact form doesn't require payment. You'll pay when you pick up your beef.

How long does the process take?

From order to pickup is typically 2-4 weeks, depending on butcher availability.

Can I choose specific cuts?

Yes! The cut sheet lets you customize your preferences. The butcher will review options with you before processing.

What if I don't have enough freezer space?

We recommend at least 5 cubic feet for a quarter cow. Consider splitting an order with a friend or family member, or look into purchasing a small chest freezer.

Do you ship?

No, shipping is not currently available. We offer local pickup at Pierce Co Meats and delivery within 50 miles of River Falls, WI.

Is your beef organic?

Our cattle are fed certified organic crops grown on our farm. While our fields are certified organic since 2024, the meat itself is not certified organic due to butcher facility and fencing requirements. Learn more about our organically managed practices on our About page.

What's the difference between steak-heavy and ground-heavy?

Steak-heavy gives you more premium cuts (ribeyes, T-bones, sirloins) and less ground beef. Ground-heavy gives you more versatile ground beef for everyday cooking and fewer steaks. You choose your preference on the cut sheet.

Can I visit the farm?

Yes! We welcome farm visits. Contact us to schedule a visit and see where your beef comes from.
